Venison brings a rich, slightly earthy flavour that pairs beautifully with the bold spices and bright citrus notes of classic fajitas. This Venison Fajita Bowl combines tender strips of seasoned venison with sautéed peppers and onions, hearty black beans, and fluffy rice for a meal that's both satisfying and nutritious. Finished with fresh avocado, cilantro, and a squeeze of lime, it's a colourful, protein-packed dish that's perfect for a weeknight dinner or meal prep.

The lean nature of venison keeps the bowl light while still delivering plenty of flavour, making it a great twist on a Southwestern favourite.

Ingredients

For the venison

  • 450g venison haunch steak(s)
  • 1 tbsp olive oil
  • Juice of 1 lime

Fajita seasoning

  • 1 tsp chilli powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp kosher salt
  • ¼ tsp black pepper

For the fajita vegetables

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced
  • 1 tbsp olive oil
  • Pinch of salt

For the bowls

  • 400g cooked rice (white, brown, or cilantro-lime)
  • 1 can black beans, drained and rinsed
  • 1 avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges

Optional toppings

  • Pico de gallo
  • Shredded lettuce
  • Corn salsa
  • Pickled jalapeños
  • Sour cream or Greek yogurt
  • Crumbled feta cheese

For the quick sauce (optional)

  • 120g Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp hot sauce
  • Pinch of salt

Method

  1. Marinate the venison. Combine the venison with the olive oil, lime juice, and all the seasoning ingredients. Toss well and let sit for 20–30 minutes, or up to 4 hours in the fridge.

  2. Cook the vegetables. Heat a large skillet over medium-high heat. Add the olive oil, peppers, and onion, and cook for 6–8 minutes until softened and lightly charred. Remove and set aside.

  3. Cook the venison. Using the same skillet, increase the heat to high. Add the venison in a single layer and cook for 1–2 minutes per side for thin strips, or 2–3 minutes per side for steak pieces. Avoid overcooking — venison is lean and best served medium-rare to medium.

  4. Warm the beans. Heat the black beans in a small saucepan or microwave. Add a squeeze of lime and a pinch of cumin if you like.

  5. Make the quick sauce (optional). Stir together the Greek yogurt, lime juice, hot sauce, and a pinch of salt until smooth.

  6. Assemble. Divide the rice among 4 bowls. Top each with black beans, fajita vegetables, venison, avocado, cilantro, and lime wedges. Drizzle with the quick sauce, then finish with your preferred toppings.


Tips & Notes

  • Don't overcook the venison. It's much leaner than beef, so it's best served medium-rare to medium. Pull it from the heat while still slightly pink and let it rest to keep it tender.
  • Marinate ahead. The venison can sit in its marinade for up to 4 hours in the fridge — the longer it marinates, the more flavour it picks up.
  • Great for meal prep. Cook the components ahead and store them separately, then assemble bowls fresh through the week. Add the avocado and sauce just before serving.
  • Switch up the base. Cilantro-lime rice adds a fresh, zesty note, but brown rice, cauliflower rice, or quinoa all work well too.
  • Char for flavour. Let the peppers and onions catch a little colour in the pan — that light char adds a smoky depth that makes the bowl taste like proper fajitas.
